Apple and Cinnamon Quinoa Breakfast Cereal
Here are a number of my favourite quinoa breakfast recipes. Enjoy!
1/2 cup quinoa
one cup water
1/2 apple, cored and diced
cinnamon
honey or brown sugar
Ingredients:
Instructions:
In a pot, put quinoa and water. Bring to a boil, then reduce heat to a simmer. Cover and simmer for five minutes. Add the apple and cinnamon and continue to simmer for about ten more minutes or until all the liquid has been absorbed. Mix in as much brown sugar as you deem necessary. Enjoy warm.

Almond and Berries Quinoa Mix
Ingredients:
Instructions:
1/2 cup quinoa
one cup water
one tbsp almond slivers
1/2 cup mixed berries
honey or brown sugar
In a pot, put quinoa and water. Bring the mixture to a boil. Reduce to a simmer and simmer while covered for about ten minutes. Add in the berries. Simmer for five more minutes or until all the liquid has been absorbed. Add as much honey or brown sugar that you like. Sprinkle almond slivers before serving for added crunch. Serve warm.

Quinoa Chicken Porridge
olive oil
one clove garlic, crushed
one cup left over cooked chicken
1/2 cup quinoa
one cup water or chicken broth
salt and pepper
chopped spring onions
Ingredients:
Instructions:
In a pot, warm the olive oil. Saute garlic and stir in chicken meat. Stir for about one minute, then add the quinoa. Stir for another minute. Add the water or chicken broth. Bring to a boil. Reduce heat to a simmer. Cover and simmer for about 15 minutes or until the liquid has been absorbed. Add salt and pepper to taste. Top with chopped spring onions and enjoy.
